Ginger and Applesauce Cake

Ginger has a strong flavor so make sure you only use a bit in this recipe. Other than that, the cake is delicious and it preserves a lot of moisture from the applesauce.
Ingredients
2 cups whole wheat flour
1 cup of sugar
2 oz candied ginger, chopped
2 tablespoons cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
2 1/2 cups applesauce
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 pinch of salt
2 tablespoons maple syrup
Directions
- In a bowl, mix together the applesauce, lemon juice, and vanilla.
- Stir in the sugar, flour, cornstarch, baking soda and powder, cinnamon and a pinch of salt. Mix well then fold in the candied ginger.
- Pour this batter into a round cake pan, lined with parchment paper.
- Bake the cake in a preheated oven at 350F for 30-40 minutes. To check if it’s done, insert a skewer into the center. If it comes out clean, the cake is done, if not, bake it 10 more minutes.
- Let it cool in the pan then powder it with sugar and serve cut into slices.
